My favorite dishes: the squid with Sichuan pepper, the pork ribs in the wok (the spices, the tenderness of the pork, this recipe is quite incredible) and the famous steamed sea bass. The setting is quite nice, the wine list quite extensive. They actually have a reasonably priced Maotai, which is quite surprising (a vintage that was cheaper than the one currently selling apparently, but is still very good). They are also starting to make a few products in grocery mode, including a very nice Sichuan pepper oil. On the other hand, their chilli oil is rather light (and a little disappointing I admit - more sesame than chilli I have the impression) compared to the hot oils that I have tasted (from Hong Kong in particular). You have to nuance it a bit. ;) (Original) Sans doute un des meilleurs restaurants de cuisine sichuanaise de Paris (et j'en ai testé pas mal, étant assez amateur de cuisine chinoise) ! Mes plats coup de coeur : le calamar au poivre du Sichuan, les travers de porc au wok (les épices, la tendreté du porc, assez incroyable cette recette) et le fameux bar vapeur. Le cadre est plutôt sympa, la carte des vins assez fournie. Ils ont d'ailleurs un Maotai à prix raisonnable, chose assez étonnante (un millésime qui était moins cher que celui qui se vend actuellement apparemment, mais qui est pourtant très bon). Ils commencent aussi à faire quelques produits en mode épicerie, dont une huile au poivre de Sichuan très sympa. Par contre leur huile aux piments est plutôt light (et un peu décevante j'avoue - plus de sésame que de piments j'ai l'impression) comparée à des huiles piquantes que j'ai gouté (de Hong Kong notamment). Il faut bien nuancer un peu. ;)
